In a plastic bag in the fridge, spinach should last about 1 week. Wash only right before you eat, and if you’re making salad, take the time to dry it well in your spinner so that your dressing will coat it easily.
Absorb its iron with the help of vitamin C; if you cook it or eat it in a salad, add citrus!
