Looks like a white carrot, tastes like a… parsnip. A unique and wonderful root veggie to add to your roast & stew arsenal.
They’ll last 2-3 weeks in the crisper if you keep them in a loose plastic bag. Nonetheless, if you forget about them for a while and they get wrinkly, they still make for excellent roasting!
Parsnips are usually cooked, but they're pretty tasty raw shaved into a salad! Just scrub the skin well (or peel it and compost or make stock from the skins).
