Looks like a white carrot, tastes like a… parsnip. A unique and wonderful root veggie to add to your roast & stew arsenal.

They’ll last 2-3 weeks in the crisper if you keep them in a loose plastic bag. Nonetheless, if you forget about them for a while and they get wrinkly, they still make for excellent roasting! We ate parsnips that had been sitting in our crisper for at least four months.

COOKING TIPS

Parsnips are usually cooked, but they're pretty tasty raw shaved into a salad! Just scrub the skin well (or peel it and compost or make stock from the skins).
