Microgreens & shoots are the tender young growth of greens. They’re small and delicate, yet loaded with the flavour and nutrition of a full-sized plant.
Store in a plastic bag in the refrigerator. Microgreens are best if eaten within a few days, but pea shoots will last up to a week. Again, wash only right before use!
The seed is sometimes still present, usually attached to the (cotyledon) leaves, and is fine to eat. If you don’t like the hard seed coats on the leaves, they will rinse gently off when you wash them.
