Before you cut it open it can sit on the counter for about a week or so. Once opened, keep it in the fridge, ideally covering the open quarter or putting the open face down on a plate if cut in half.
Avoid cutting melons on a wooden cutting board, they'll absorb the flavours of everything you've ever cut on there.
