Cauliflower is back in vogue, and it deserves to be! It’s packed full of vitamins (lots of C and K, with some potassium, magnesium, calcium and iron too), which is somewhat surprising for a white vegetable. In recent years it’s become very popular in roasted form, when it develops complex caramel flavours.
Store in a plastic bag in the fridge's crisper.
Try to eat within 4 days for the best flavour, but it'll last about a week.
We recommend soaking before use for a few minutes in lightly salted water to draw out any grubs that could still be hiding in the cauliflower maze!
